At uni, me and my friends take it in turns to make each other breakfast on the weekends. It’s so much fun, breakfast with friends is the best way to start the day! The last time I cooked, I made french toast with brioche, and it was so yummy I’ve been making it every time I want to treat myself. The recipe I am about to show you has been adapted from this one from bbcgoodfood, and makes enough breakfast for two people.
You will need:
Brioche! I used four brioche rolls, but you could also use four slices of brioche loaf, or make your own brioche if you’re feeling particulary adventurous.
1 mug of milk (I use soy milk, which makes the brioche extra sweet)
A punnett of blueberries, or whatever berries you like best – rasberries, strawberries and blackberries work too!
Step1: Whisk together the egg and soy milk with a teaspoon of sugar.
Step 2: Slice the briche rolls in half, and dip them in the eggy mixture. Melt the butter in the frying pan on a low heat, and put the brioche slices in the pan. Once they have browned a little, turn them over and cook the other side.
Step 3: Whilst your french toast is frying, put the berries in a pot on a medium heat. As they heat up, the juice will spurt out and it will become lovely and jammy. At this point, stir in a teaspoon of sugar and a teaspoon of allspice.
Step 4: Once the second side of your brioche has browned, put them on a plate and sprinkle some cinnamon on top. Spoon on your juicy berry mixture, and then add some cream, if that’s your kind of thing.
